Capriccio Saratoga

While Capriccio Saratoga will honor regional Italian cooking, it's special focus will be on the fantastic cuisine of Naples, with particular emphasis on Verace Pizza Napoletana (authentic Neapolitan pizza). Capriccio Saratoga will also offer scintillating maccheroni (pasta) dishes, marvelous antipasti and fabulous desserts. The restaurant will serve wine and spirits and it will be filled with music and warm hospitality. Pizza will be made according to standards of the Associazione Verace Pizza Napoletana (VPN) representative and protector of traditional Neapolitan pizza ingredients and cooking techniques. It will be baked in our forno di legna (wood-fired oven) especially imported from Napoli for this purpose. While Neapolitan gastronomy today is rich and complex, its historical importance dates to the early 18th century when the writer Vincenzo Corrado wrote in his treatise on foodstuffs used in Napoli that the tomato was used to season pizza and macaroni, thus associating the three elements we now recognize as essential to Neapolitan cuisine, arguably the most popular foods in the western world: pizza, pasta and sauces made with tomatoes.
