Be able to determine the overall concept and plan for the cake. Consult with customers to learn their vision for their cake. Be able to ask questions like these: How many people do you want to serve? What is the theme and color scheme of the wedding? For decorations, do you want fresh cut flowers, elaborate marzipan roses or white chocolate lace? Do you want four-tiers covered in chic fondant or several separate cakes with fluffy cream cheese frosting? Be able to discuss cake types and filling flavors, such as dark chocolate cake with espresso butter cream, white sponge cake with lemon curd mousse, or German chocolate cake with raspberry filling—or a mix of all three. Be able to make an accurate sketch, with detail, portraying the customer’s vision. You also must have manual dexterity, natural artistic flare and design skill, an eye for detail.
